Worldwide, potato production has increased steadily. However, as the consumption of industrialized potatoes grows, the consumption of fresh potatoes has decreased.

The reduction in the consumption of fresh potatoes is related to several factors, the most important being the media that disseminate false news and offers of varieties without culinary skills. The growth in the consumption of industrialized potatoes is mainly due to the practicality and the use of varieties with excellent characteristics that provide satisfaction to consumers.

Bearing in mind that in most Latin American countries the production of potatoes predominates for the fresh market, this thematic area of ALAP pursues the following objectives:

Objetives

1. Exchange of knowledge between the countries of Latin America and the Caribbean to promote the market and internal consumption of fresh potatoes. • Consumer satisfaction: encourage the production of "multipurpose" varieties to provide consumer satisfaction • Health: encourage the consumption of fresh potatoes that provide health to the population 2. Exchange of knowledge between the countries of Latin America and the Caribbean to encourage the national potato processing industries • Local industries: support research and knowledge exchange to encourage the growth of national potato processing industries • Industrialized products: promote research and exchange of knowledge of new processed potato products for the industry, as well as the use of discarded potatoes
